Wuxia - this is the correct term.

Faves:

Hero (simply a wonderful, beautiful film in ANY genre)
Ip Man
Crouching Tiger, Hidden Dragon
Fearless
Ip Man 2
Warriors of Heaven and Earth
House of Flying Daggers
Curse of the Golden Flower
The Forbidden Kingdom
Three Kingdoms - Resurrection Of The Dragon
Red Cliff 1 & 2 (more war films, than Kung Fu)

I watched Project A a while back, I don't think I posted a review. I enjoyed it quite a bit. While most of the non-physical comedy elements didn't work for me, the stunts and the homages to the silent era were fantastic.

I'm not as keen on Jackie Chan stuff because it's mostly comedy. The Shanghai movies were ok.

Also, the Donnie Yen movies:

Bodyguards and Assassins
Dragon Tiger Gate
14 Blades

And Michelle Yeoh in True Legend

These are all less well known as Hero etc, but rate high in story, fights and production values.
