i'm having trouble understanding umami. they say it isn't one of the four traditional tastes but when described it refers to a maybe earthy but always savory taste from glutamates or MSG. so maybe a less or mellower salt but still in a salty category, no?
how sophisticated does your palette need to be to separate out umami?
is it something as easily discernable as salty or sweet?
do most folks taste it & not know it?
is it just the musty funky yummy mushroow/shelfishy thing?
i don't get it.
help please.

I read that umami has not that much taste from itself, but it is used in combination with other foods to make the taste more 'intense'. Don't know the English word for it, but Ve-Tsin is a Chinese spice that 'carries' this. Supposedly it is also linked with the 'Chinese Restaurant Syndrome', because of some people being allergic to this ingredient. We have quite a lot of Chinese restaurants here and I remember this 'syndrome' was discussed a lot in the late 70ies and 80ies here. I think this was never really proven btw.

I cut all our dogs' toenails. Maybe you should use that special dog toenail clipper that shaves the nails as opposed to cutting them. I mean on your own toenails. Hehe
